Cheesecake in Mexico

One of my favourites - Mexican style! Sampled at the Playacar Palace {which I loved!} while away this past April. My final baking class will now be in September, but the good news is I have a new kitchen {and new home} so a lot more baking coming soon...as soon as I figure out how to use my gas stove.
