I hate coconut!
Something to do with the stringy texture in my mouth. And both of this week's cookies included it. They were also both drop cookies, which we've done before, so overall, not my most favourite class. Coconut Macaroons include whipped egg whites, icing sugar, coconut, ground almonds & lemon zest. They are then scooped onto onto a tray and baked for about 20 minutes. Once cooled, they are dipped in chocolate.

Coming this Christmas...
Back to school! My Art of Cookies class started off simple last night with a classic shortbread recipe. This is a less buttery version of typical shortbread: butter, icing sugar, bread flour and rice flour are combined and rolled out and baked for approximately 20 minutes. Very light and flaky. I can't wait to make these again during the holidays.
